Back in 2011, among my very first commissions, was a piece about the restoration of Hughenden Manor’s walled kitchen garden. It had been transformed from a derelict plot of overgrown land, to a pretty kitchen garden, maintained by volunteers, and used as an educational resource for local school children and the local blind club. I went to visit the walled garden and chatted with one of the volunteers working on the plots. He was friendly and happy to show me around and tell me all about it. I asked his permission to quote him and took his photo, but I didn’t have a commission to write it up yet.

So I contacted the National Trust press office and they put me in touch with a medium who said she’d experienced Disraeli’s presence in the drawing room. I wrote up her story for a spiritual publication. Then I did a lengthier piece on the Hughenden Ghost for a paranormal magazine. To complete this article, I returned to the site, did the ghost walk, and took photographs of all parts of the house that had reportedly been privy to Disraeli’s ghost. The staff thought I was mad. Some months later, I wrote a piece on the life of Benjamin Disraeli for an historical publication, and took pictures of the house and grounds to accompany the article.

As part of my nutrition training, I created my own dishes with healthier alternatives to the ingredients listed in more traditional recipes. I would invariably use healthy fats instead of butter. I’d never include sugar, and I’d use whole-grain ingredients when the original recipe required white flour. Sometimes I’d use less fat and other times I’d want to achieve a low carbohydrate dish, so I’d cut right down on grains or use seeds instead. This opened up a market for me to sell healthy recipes as alternatives to the unhealthy foods that most people cook and eat.
